Cast Iron Cooking: Fast & Easy Baked Sweet Potatoes
My 12in cast iron skillet is one of my favorite tools in the kitchen. I use it daily, even when we grill! I can use it anywhere and it never fails me. Now that the fall season is upon us, it means lots of carbs, comfort food and roasted veggies!
Sweet potatoes can take a while to cook, which can suck when you are cold and hungry when you get home in the dark. So for fast and easy sweet potatoes that are to die for…use your cast iron. You can also use a baking sheet if you don’t have a cast iron. But think about putting on on your wish list :)
You will need:
Cast Iron Skillet or Baking Sheet
Other spices as desired (garlic powder, onion powder, paprika and cinnamon are my favorites)
Pre heat your oven to 400
Slice off the ends of the potatoes and then slice in half lengthwise
Drizzle the potato all over with olive oil, and then season the skin and the flesh with your seasonings. Feel free to switch it up for each meal!
Place the potato cut side down on in the skillet or baking sheet. Use a small knife to prick a few holes in the skin of the potato
Bake for 30 min until the potato is soft. The skin will be slightly crispy and the flesh of the potato that was on the cast iron gets caramelized and makes it SO MUCH BETTER than regular baked potatoes!
Let cool slightly and then enjoy! I like to score mine a little and then add a little butter and fresh herbs. It’s the perfect side dish for just about any fall meal.
