Brown Sugar & Spiced Bacon Wrapped Chicken
Chicken for dinner can get so boring...spice it up! Bonus points for including bacon of course...
For a 2 person dinner... you will need:
- Chicken breasts (1 per person) If you can marinade the chicken in buttermilk or coconut milk for at least 20 min, do it! It makes it so much more tender and flavorful!
- Bacon strips, uncooked (at least 2 per chicken breast)
- 1 tsp garlic powder
- 2 cloves of garlic (minced)
- 1 tbs chili powder (more if you want...but it can be overpowering)
- 1/2 tsp black pepper
- 1/2 tsp salt
- 2 tsp cumin
- 1 tsp onion powder
- 1 tsp ground mustard
- 1 -2 cups brown sugar
Preheat oven to 350, lightly spray a baking tray with non-stick spray or line with foil. This will help make clean up a breeze. Melted brown sugar on a baking try...eesh!
Cook the bacon on one side until it just barely starts to brown. You want the bacon to be "started" but not cooked at all. Set aside.
Combine all ingredients excepts for brown sugar and bacon in a bowl.
Coat the chicken breasts in the spice mixture
Using toothpicks, wrap the bacon strips around the chicken breasts
Roll the bacon wrapped chicken breast in brown sugar. Careful...the toothpicks can be stabby. I have poked myself a few times while being careless.
Place on the baking tray and cook for about 30 mins, until the chicken is cooked through. If you want a crispier candied bacon crust (and who doesn't...) place under the broiler for a few extra minutes to finish it off.
Alex and I added some asparagus (with bacon) as our veggies....ok, ok, ok. So this may not be the most healthy dish, it sure is tasty!
Chili powder can be over powering, so if you aren't used to cooking with it, take it easy. The brown sugar offers a nice balance to the the spice, but this dish is still *spicy*!
As always, adjust the recipe amounts as you see fit. You know your palate! If you want to add a little more or less of something, do it!
