Chocolate Chip Cookies-Gluten Free!
Gluten free and still amazing! You can simply sub out the gluten free flour for gluten full flour to make a standard batch.
You will need:
- 2 1/4 cup gluten free flour blend (check for xanthum gum, if it doesn't have it add 1/2 tsp to it)- I used Namaste Flour Blend.
- 1 tsp baking soda
- 1 1/2 tsp salt
- 1 cup (2 sticks) of butter, softened- I use Earth Balance Vegan Butter and it works great!
- 3/4 cup granulated sugar
- 1 cup packed brown sugar
- 1/2 tbs vanilla extract
- 2 large eggs
- 2 to 2 1/2 cups chocolate chips
Preheat oven to 375.
Mix flour, salt, baking soda (and xanthum gum if your flour blend doesn't have it), set aside.
Beat butter, granulated sugar, brown sugar and vanilla extract until creamy.
Add eggs one at a time, beating well in between each one.
Slowly mix in the flour mixture. (At this point, I tend to do a taste test. I know I know...BUT RAW EGGS!! I live on the edge. I'll taste it to see if it needs more salt or vanilla.)
Stir in chocolate chips. Start with 2 cups, and add the extra 1/2 if you think it needs more chocolate. (Which, lets be honest...more chocolate is always a great idea)
Drop by rounded spoonfuls onto your cookie sheet.
Bake for 9-11 minutes, until the cookies are nice and lightly browned.
Let cool, and then enjoy!
