Mushroom Gravy Smothered Pork Chops

This is one of my ultimate go-to comfort food recipes. Perfect for cold nights when you need something warm and rich! You will need:

  • 2 bone in pork chops
  • 1-2 cups sliced mushrooms
  • 2 cups cooked rice
  • 3/4 cup milk
  • 2 tbsp gluten free flour
  • 2 tbsp butter
  • 2 tsp salt
  • 2 tsp pepper
  • 2 cloves of garlic, diced
  • 1 tbsp dried rosemary
  • 2 tbsp olive oil

Season your pork chops with salt and pepper to taste and the dried rosemary. Set aside. Preheat oven to 400 degrees Fahrenheit.

Sauté the mushrooms in a pan, remove from heat and set aside.

Heat the olive oil in a large pan and sear the pork chops on each side on medium high heat until brown, about 2-3 minutes per side. Remove from the pan and set aside.

In the same pan, melt the butter over medium heat and scrape up any brown bits. That will add a lot of great flavor to the gravy!

Reduce heat to low, add the flour to the pan and whisk to combine. Once the flour and butter are all combined and browned, slowly add the milk and continue whisking until it's all mixed together. Add the salt, pepper and garlic as the gravy begins to thicken. Taste as you go, and add more seasonings to your personal taste.

Once it's thickened up and is seasoned to your liking, add in the sliced mushrooms. Stir to combine.

In a small pan, layer the pork chops, rice and the gravy. Place in oven and bake for 10-15 min.

Remove from oven, let cool and serve!
