Grilled Dill Potatoes

Hello, my name is Victoria, and I'm a carb-aholic.

What is funny is that my family was the definition of "meat & potatoes" and the man I love doesn't love potatoes. He just isn't a carb lover like I am! So for years, I would try and get him to eat potatoes and side dishes with potatoes in them and he just turned his nose up at them. He thinks that they are plain, and "blah."

I never gave up though! I have found a few ways to make potatoes that Alex will eat, and even request! Like this one. Grilled Dill Potato slices, that he asked for last night for dinner.

You will need:

  • Potatoes (any kind you like! we used Gold potatoes, because that's what was is the pantry...) 1 per person
  • 1 tbs Olive Oil per potato
  • 2 tsp Salt per potato
  • 1/2 tsp Pepper per potato
  • 2 tsp Garlic Powder per potato
  • 1 tbs Dill (fresh is preferred, but dried works just as well) per potato

I make the note of "per potato" so you can easily size up the recipe if you want to make a large batch for a potluck or if your family is bigger then just 2 people.

Preheat your grill or start your coals.

Start by washing your potatoes and making sure they are clean.

Slice the potatoes into 1/4 inch slices.

Place in a large bowl, and add the oil. Tossing with a large spoon so the slices are evenly coated.

Add your seasonings, and as always, follow your taste buds.

I like my flavors balanced a certain way, and you may be different.

If you have a grilling tray, you can use that, or make an aluminium tray. Layer the potatoes in a single layer.

Grill over medium/high heat until the slices are soft, and brown.

These have such a great smokey flavor because the potato absorbs so much flavor from the air around it and the dill is a great fresh twist. Perfect with bbq chicken!
