Tequila Tacos!

This is my favorite way to make tacos! What is more south of the border than tacos and tequila?! I only use a  little bit of tequila, so it's more of a taste, nothing too crazy. You'll be full after this meal, not drunk. Unless you drink more tequila with the tacos... You will need:

  • 1lb ground beef/turkey/tofu (Yes tofu! I swear it's delicious!)
  • 1 packet taco seasoning
  • 1/4 cup tequila
  • 1/2 cup water
  • 2 garlic cloves, diced

Brown the meat, or warm up the tofu in a pan. Drain the fat if you used meat!

Add in the taco seasoning, tequila and water. Mix well.

Bring to a boil, and then let simmer for a few minutes.

Once it's all heated, make your tacos and serve immediately! The meat saves well, just put in an airtight container and store in the fridge.

I made these with tofu, and even Alex loved them. I found some amazing gluten free tortillas, not even corn! Udi's makes these amazing tortillas that are just like flour ones! And I used Daiya cheddar cheese, it's vegan and tastes great! It was Tequila Tofu Taco Tuesday!
