Sweet Potato Salmon Cakes

GLUTEN FREE! I was really happy with these.

You will need:

  • 1 large sweet potato, cooked
  • 1 lb of salmon, cooked
  • 3 green onions, diced
  • 1 egg
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 2 cloves garlic, diced
  • 1 tsp salt
  • 1 cup almond flour
  • 1/4 cup parmesan cheese, grated
  • oil for frying

Cook and peel the potato, place in bowl and let cool.

Put the almond flour and cheese in a separate bowl and set aside.

Mix in the rest of the ingredients except for the cheese and almond flour.

Mix well and try and break up the salmon into even sized chunks

Form into patties about the size of your palm, and coat in the almond flour. Should make 6-8 patties, depending how big you make them.

Place in the fridge for 20-30 minutes to firm up.

Heat up oil over medium heat in a large pan,  and gently place in  the oil.

Cook for about 3-5 minutes per side. Until brown and crispy.
