Sautéed Spicy Kale and Chickpeas
I like kale! It's salty and yummy and a good change to spinach.
Such a great side dish!
You will need:
- Green Kale, 1 large bunch
- Olive Oil
- 3 cloves of garlic, minced
- 1 (14 oz) can chickpeas, drained
- 2 tps paprika
- 1/2 tbs red chili flakes
- A squeeze of lemon juice
Tear the kale from the stalks and place in a bowl.
Pour a couple tablespoons of olive oil over the kale and massage into it. This will help soften it and make it less tough and chewy when cooked.
Heat a few tablespoons of oil on low heat in a saucepan and brown the garlic.
Add in the kale and stir to coat with oil and garlic.
Cover, and increase heat to medium low.
Cook for about 15-20 minutes, stirring occasionally, until the kale is soft.
Add in the chickpeas, paprika and chili flakes. (Throw in some more garlic if you want!)
Bring the heat up to medium and cook until the chickpeas are warmed through, about 5 minutes.
Top with a squeeze of lemon juice!
