Balsamic Roasted Figs & Tomatoes
Try as a side dish to some lamb!
You will need:
- Half a dozen whole figs
- 1 large tomato
- 1 tbs dried basil
- 2 tbs olive oil
- 1/4 cup balsamic vinegar plus more for drizzling once cooked
Makes enough for a side dish for 2 people
Preheat oven to 400
Slice the stem off the figs and cut in half length wise, place in a medium bowl.
Quarter the tomatoes, sprinkle with salt and pepper and put in the same bowl as the figs.
Add the oil, vinegar and basil to the bowl and toss with a large spoon to coat the figs and tomatoes in the mixture.
Put on a baking sheet with a lip, and pour the figs, tomatoes onto it. Drizzle the rest of the oil and vinegar from the bowl on top.
Bake for 10-15 minutes until soft and delicious! Drizzle a little more balsamic vinegar once you plate if that sounds good.
