Spicy White Bean Puree

Similar to hummus, but distinctly different. This makes a great dip!

You will need:

  • 1 can white beans
  • 1/2 tbs salt
  • 2 tps ground cumin
  • 2 cloves garlic
  • 3 diced green onions
  • 1/2 red bell pepper, diced
  • 2 tbs lime juice
  • 1/4 to 1/2 jalapeno (depending on how spicy you like)
  • 2 tps paprika

Drain the beans and put in a food processor

Add in the everything but the red bell pepper, and blend on high until smooth. Turn off...then taste it, add more seasonings or lime juice if needed. You'll know what you like! Once it tastes right, pour into a bowl.

Dice the red bell pepper and mix into the bean puree. Put the bowl with the puree in the fridge to chill.

Once that is cool, serve with chips, veggies or as a side to grilled lamb or beef.
