Sweet Potato Breakfast Hash
I made this on the morning Jess, Rachel (two of my bridesmaids), Alex and I drove up to Canada for a hockey game. It was hit! You will need:
- Sweet Potato/Yam (1/2 of a large one per person)
- Eggs (1 per person)
- 1-2 strips of bacon/sausage links per person
- 1/2 tbs paprika
- 1 teaspoon garlic powder
- 1 teaspoon nutmeg
- salt and pepper to taste
- olive oil
- 2 tbs of butter per whole potato
- Handful of shredded cheese
Wash and julienne (cut into very thin slices) the potatoes.
In the largest skillet you can find, (and if you are making this for more then 2-3 people you may need another one...or 3) melt the butter and olive oil over medium-medium high heat. Toss in the potatoes and stir to coat with oil and butter.
Cook until potatoes are soft, 20 min or so. Season with salt, pepper, nutmeg and paprika. Add in the cooked bacon or sausage and mix into the potatoes
Make a small well or hole in the potatoes and crack an egg in it. Let cook until it's done how you like it. Taste the potatoes and season more if you like. Throw on some cheese and let melt.
To serve, just scoop out the egg and the surrounding potatoes. Top with hot sauce or what ever you would like for flavor. My favorite sauce at the moment is chicaoji, Give it a try!
