Roasted Cherry Tomatoes
To be honest, it's a little like a summer time explosion in your mouth... You will need:
- package of cherry tomatoes (16 oz)
- 1 tsp dried mint
- 2 cloves of garlic (minced)
- 2 tbs olive oil
- 1 tsp salt
- 1 tsp dried rosemary
Pre-heat oven to 400 and line baking tray with a silicone baking mat or parchment paper
Slice the cherry tomatoes in half
In a medium bowl toss all seasonings, oil and tomato halves. Let marinade for about 5 min
Pour onto baking tray
Roast for 20-30 minutes, until the skins have burst and are browning.
Remove from oven, let cool, and serve as a side dish or just as a nice snack!
