Baked Polenta Caprese


Caprese salads are one of my most favorite things. I also love to put a good twist on them, like turning it into a puff pastry! This time, though I wanted to throw in some protein and polenta, cause why not?

You will need:

  • Tomato
  • Mozzarella
  • Fresh Basil
  • Olive oil
  • Balsamic Vinegar
  • Polenta (pre-cooked)
  • Meat of your choice, I had left over carne asada

I am usually not thinking far enough in advance to cook polenta, the craving comes to me and I don't want to wait 45 minutes. So I use pre-cooked polenta. It comes in a nice little cylinder that I can cut into slices.

Preheat oven to 350, slice the polenta into 1/4 to 1/2 inch slices, place on a baking sheet.

Bake the polenta for about 10-15 minutes, until warm and a little crispy.

While that is cooking, slice up the tomato and the mozzarella, slice and warm up the meat.

Remove the polenta slices from the oven and transfer to a plate on top of the tomato slices. Then top with the mozzarella, meat and a few basil leaves. Drizzle a mixture of olive oil and balsamic vinegar over it. Serve on a plate and enjoy!
