Avocado Baked Chicken

Chicken for dinner? Again? Gets a little boring doesn't it? I had an avocado that was about to go bad, so I decided to whip something up with it. I've seen recipes for pureeing it and using it as a dip and spread, but I thought it would taste amazing on top of chicken.

You will need!

For Avocado Spread:

  • 1-2 small avocados
  • 2-3 cloves of garlic
  • 1 tbs lemon juice
  • Salt and Pepper
  • 5-6 basil leaves

For Chicken:

  • 2-3 boneless skinless chicken breasts or thighs
  • Salt and Pepper
  • Tomato, sliced
  • Parmesan Cheese

Preheat oven to 350

Season the chicken with sale and pepper and set aside on baking tray

In a food processor, puree everything together for the avocado spread. If you don't have a food processor, you can still make this work! Just be sure to dice the garlic and basil very fine before you mix everything together. If you want, you can switch the cloves for garlic powder. It may be a little chunkier then with a food processor but that really doesn't matter that much.

Now spread the avocado puree on the chicken, top with the slices of tomato and douse LIBERALLY with Parmesan cheese.

Bake for 20-30 minutes until the chicken is cooked through and the cheese is getting a little brown.

Serve with pasta...rice...anything you like! No pressure or judgement here. Just enjoy!
