Kale Chips!

Kale chips are great! Who likes salty crispy crunchy chips? How about cutting down on the carbs and calories? I have 2 variations for these, spicy cheese and garlic ranch. Same process, just different toppings! Salty and delicious!

Spicy Cheese:

You will need:

  • Large bunch of kale
  • 1 tablespoon Olive oil (enough to coat)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Chipotle chili powder
  • 1/4 cup nutritional yeast (it's the cheesy flavor!)

Preheat oven to 300

Tear the leafy bits off the kale from the thick stem into bite sized pieces

In a large bowl, drizzle the olive oil over the kale chips. With your hands and fingers, massage the oil into the kale. This will make sure they get crispy and not chewy.

Massage kale with oil

Add the salt, pepper and chili powder. And toss to combine. Add in half of the nutritional yeast and make sure the kale is coated.

Put the kale on a baking sheet lined with a silicone baking sheet or sprayed with non-stick spray. Make sure they are in a single layer. Top with the rest of the nutritional yeast.

Cook for 20 minutes, stir on the baking tray and bake for another 2-5 minutes until dry and crisp. Watch carefully! Don't burn!

Crispy Kale Chips!

Garlic Ranch:

  • 1/2 tablespoon garlic powder
  • 1/2 packet dry ranch mix

Preheat oven to 300

Add the salt and garlic powder. And toss to combine. Add in half of the ranch powder and make sure the kale is coated.

Ranch Powder

Put the kale on a baking sheet lined with a silicone baking sheet or sprayed with non-stick spray. Make sure they are in a single layer. Top with with the other half of the powdered ranch.

Cook for 20 minutes, stir on the baking tray and bake for another 2-5 minutes until dry and crisp. Watch carefully! Don't burn!
