Country Gravy

Biscuits and Gravy are one of my most favorite things for breakfast, or brunch...or breakfast for dinner...I just really love it. I got homesick, so I made some! Most recipes make a TON of gravy, enough for 4-5 people, you know, a southern family. But it's only Alex and me, so I've adjusted to make enough for 2 servings. 2 fairly large servings, but still, just 2. This is quick and easy to make. Perfect for a weekend morning (aka your cheat day for your diet)

This is also is not the most healthy, nor vegetarian or vegan...it's good old fashioned southern comfort food!

You will need!

  • 1/2 stick butter
  • 1/4 cup flour
  • 2 1/2 cup milk
  • 3-4 strips of bacon ( you can use sausage, but Alex wanted bacon)
  • 2 tsp salt
  • 1 tsp pepper
  • 1/2 tbs garlic powder
  • 1 tsp red chili flakes

Cook up the bacon, drain off the grease and dispose. Once it's cool, cut into bite sized chunks.

In a medium saucepan (extra points if you use the same pan you cooked the bacon in), melt the butter on medium heat.

Add in the flour and whisk together until golden brown.

Slowly add in the milk, whisking constantly.

Bring to a boil, keep whisking constantly (can't stop! wont stop!). Once its boiling, add in the bacon, and the seasonings. Feel free to adjust the seasonings to your own preference.

Reduce heat to medium. Keep whisking until it reaches the thickness you want. It should only take about 10 minutes at most. Once it's there, remove from heat and prepare to serve over your biscuits.

Country Gravy

 Spoon it on top of an open biscuit or over waffles. This can be made a day ahead, just let it cool completely before you put it in the fridge. ENJOY!
