Vegan Chocolate Almond Muffins


Vegan Chocolate Almond MuffinThat is right...vegan again! This makes about 8 muffins

You will need:

  • 1 cup flour
  • 2/3 cup quick oats
  • 1/3 cup cocoa powder
  • 3/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 cup almond butter
  • 1 cup almond milk
  • 1/4 tsp almond extract

Pre-heat oven to 400 and put muffin liners in muffin tin.

In small sauce pan over low heat,  melt almond butter into the almond milk. Stir with whisk constantly, should take about 2 minutes. Once melted, add in almond extract, remove from heat and let cool.

In a large bowl, I used my kitchen aid stand mixer, mix together all dry ingredients. Slowly add the milk and almond butter mixture and mix on low until all combined. Spoon the batter into the muffin tins to the top! You want the "muffin top" to poof over the edge.

Place in oven and bake for 15 minutes. Test with toothpick, if it's clean, it's done!
