Classic Vanilla Cupcakes


This is a great thing to have in your recipe book. It's a classic and can be easily tweaked to make it special. Substitute any flavoring for the vanilla for a fast change. You will need:

  • 2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/4 sticks (10 tbsp) of unsalted butter, softened (NO MELTED)
  • 1 cup sugar
  • 3 large egg whites
  • 2 tsp vanilla extract
  • 1 cup water

Heat oven to 325 and line muffin tray with liners.

In small bowl, mix flour, baking powder and salt. Set aside.

In a large bowl (I used my kitchen aid stand mixer) beat butter until smooth. Add in sugar and beat until fluffy, on medium, for about 2 minutes.

Add in egg whites, one at a time and beat well after each addition.

Add in vanilla

On low, beat in about half of the flour mixture 1/4 cup at a time. Once you have put in half the flour, add in about 1/2 cup of water. If the mixture is still really thick, add in another 1/4 cup.  It should look slightly runny.

Beat in the remaining flour.

Fill the cups 3/4 of the way full.

Bake at 325 for 18 min. Until slightly golden on top.

Top with your favorite frosting...try the Southern Comfort Icing. Mine are Seattle and green for the Seahawks!
