Gouda Home Fries: tasty potatoes!
I come from a steak and potato kind of family. That's just how I was raised. Every time we would have baked potatoes for dinner, my mother or father would save one to use for breakfast the next day. Home fries! They are very simple. Left over, or fresh, baked potato, cut into chunks and then seared in a pan.
You will need:
- Baked potato (russet, red, gold, whatever!)
- 1 TBS olive oil
- salt, pepper, paprika (2 tsp each)
- 1/4 cup grated Gouda ( or any cheese you like really)
If you haven't baked the potato, do that first. You can do it in the oven or in the microwave. If it's 9 am on a Saturday and you want food like, 10 minutes ago, I recommend the microwave. Just wash off the potatoes, stab a few times with a knife and microwave for 3-6 minutes until they are soft.
Cut potato into chunks and let cool (if you just cooked them).
Heat oil in pan over medium-medium high heat.
Season the potato with salt, pepper and paprika, add to pan.
Cook on each side of the potato until a nice brown crust forms. Should take a few minutes per side. Check them and flip them about 3 minutes in.
Once the potatoes are crispy and delicious, turn off heat and sprinkle the cheese over the potatoes while they are still hot.
Transfer to the plate and enjoy!
