Roasted Butternut Squash

This stuff is joke. Depending on what you are making, get a nice sized butternut squash. I typically just get the biggest one possible.

Preheat oven to 350.

Squash is tough and thick, it can take some muscle to get through. So make sure your knife is sharp and you have a solid work space.

Cut in half and remove the seeds and pulp.

Remove rind to get to the dark orange meat.

Cut the meat into 1 inch cubes.

Spread on a cookie sheet and drizzle with a little olive oil.

Roast until fork tender. 20-30 min.

Let cool and use in pasta, bakes dishes or anything else you want! Even eat just plain!
