Sweet Potato Pizza

You like pizza, don't lie. It's a fact. Pizza also isn't always the healthiest option. But if you make the crust with sweet potato...oooh...doesn't that make it sound not quite so horrible? Make you feel a little better when you eat the extra piece you didn't need, but really wanted? Maybe...it's still pizza. You will need:

  • 1 large sweet potato, cooked and mashed (2-3 cups)
  • 2.5 -3.5 cups flour (unbleached or whole wheat)<-see! already a little better than normal pizza crust.
  • 1/2 teaspoon: cinnamon, nutmeg, paprika
  • 1 teaspoon: salt, baking powder, garlic powder, oregano
  • 2 whole eggs
  • 1 egg white
  • TOPPINGS!

Preheat oven to 375 , line a baking sheet with tin foil and spray with non-stick spray

Cook the sweet potato and mash it. I used my stand mixer. You can add the rest of the ingredients in the mixer as well.

Add in the eggs and egg white and baking powder.

Add in the flour so that it equals the amount of sweet potato. If there was 2 cups potato...add 2 cups flour. It the mixture should still be soft and just a little runny. Add in all the spices.

At this point, look at the consistency of the "dough." It shouldn't look like normal dough, it should be soupy, or runny, but not liquidy (thats the proper scientific term, yes). It should have some viscosity to it. If it looks too liquidy, add 1/4 of flour until it looks like it will hold its shape when flattened.

Pour, scoop or spoon the "dough" onto the baking sheet. Spread it out into a circle, or a rectangle, whatever works. Aim for the thickness to be about 1/4-1/2 ich thick.

Place in the oven, bake for 30 min. Until the center is solid and the edges are lightly browned.

Remove and top it with sauce, cheese, and your fixings. return to the oven and cook for another 5-10 min, until the cheese is melty and the edges are golden and crispy.
