Baked Avocado: Creamy and Delicious
So avocados have gotten pretty popular lately...just look on pinterest. Which I did..."Baked Avocado" sounded right up my alley. I love a good avocado, but not a fan of it plain, I usually like it with or on top of something. The idea to bake it with other goodies was something I couldn't pass up!
You will need:
- 1 large avocado
- cheese (sliced or grated)
- olive oil
- panko bread crumbs
- salt, pepper, other spices
- muffin tin
- (Cooked) tuna, sausage, bacon, tofu, whatever....
It's really simple, preheat oven to 375-400
Cut avocado in half and take out the pit
Place the two halves in the muffin tins, cut side up. This keeps them from rolling about and falling off the tray when you put them in and take them out of the oven.
Drizzle a little olive oil, and sprinkle the salt, pepper and other spices you like on top of the avocados. I used garlic powder and chipotle.
Fill the hole the pit used to be in with the protein of your choice...
Top with the cheese and panko.
Put in the oven and bake for 10-15 min. Once done, let cool for a few minutes and enjoy!
