Honey Balsamic Baked Chicken
Bought a brand new bottle of Balsamic vinegar! So I decided to do something fun for dinner. It takes about 5-10 minutes for prep and and 20-30 minutes to cook.
For this recipe you will need:
- Chicken Breasts (Boneless and skinless)
- I.G.P. Balsamic Vinegar (or whatever type you have)
- Pre-heat your oven to 350 F
-Make sure the chicken breasts are thawed and place them in a bowl big enough for the breasts and marinade. In a separate bowl pour some breadcrumbs and put aside. Season the breadcrumbs with some salt and pepper.
- Squeeze or pour honey over the chicken. Make sure to coat each side of each piece.
-Pour about 1/3 of a cup of balsamic vinegar over the chicken. There is no need to completely submerge the chicken, just enough to get the flavor. You can add more vinegar if you would like in order to coat more.
-Let the chicken sit in the marinade for about 5 minutes. Every once in a while turn the chicken over so each side gets more marinade. Feel free to spoon the marinade over the chicken too.
-Once the chicken has soaked for a little. Transfer the breasts to the breadcrumb bowl one at a time and coat the chicken by pressing it into the breadcrumbs on both sides.
-Place each breast on a baking sheet and place in the oven.
-Cook for about 20 min, the breadcrumbs should get nice and brown. If you aren't sure if they are cooked through, just cut into the middle of one and see if it is still pink or nice and white.
Once it's done, let it rest for a minute or so and serve with rice or pasta! Enjoy!
P.S. You can switch out balsamic vinegar for Dijon mustard to get a more tangy taste. It still goes great with the honey too!
