Irish Breakfast: Corned Beef Waffles!
If it was up to me, I would have corned beef much more often then just for St. Patrick’s day. However, when it comes around, I don’t waste it. Corned beef is one of my favorite meals so when I have leftovers, I make them count! Alex and I had corned beef for dinner a day before, and we still had a good amount left. So I came up with a great idea for St. Patrick’s day breakfast. I’ve seen pancakes that are made around a strip of bacon, and Alex wanted waffles…so I compromised! Corned Beef Waffles!
It’s really simple and really tasty! All you need is some leftover corned beef, a waffle iron, and waffle mix.
Take the corned beef and cut it up into chunks.
Sprinkle the chunks around the waffle iron, as much or as little as you want, I’m a fan…so I put heaps on! Close the iron and let the corned beef warm up and get a little crispy.
Pour the batter on the iron, not to much, other wise it will overflow. Try about 1/3 of a cup, and add more if it needs it.
Once the waffle is done (my iron has a little green light that turns on when it’s done), just put it on the plate!
Alex topped his with the usual syrup, I put a fried egg on mine. It was so good! It was a really tasty way to use leftovers and a very festive way to celebrate one of my favorite holidays!
TIP- for really great corned beef, cook it in Guinness beer for about 8-10 hours, depending on the size of the brisket. It gets a lot more flavor in beer then in water.
